Super Easy Weeknight Stir Fry

I love stir fry. You just take whatever veggies and meat you have, pour a few basic flavors in it and you have dinner superfast. I usually keep frozen stir fry veggies in the freezer for a back up meal plan. I almost always have coconut aminos, sesame oil, fish sauce, garlic, ginger, cilantro, and limes around so that’s my basic flavor profile for stir fry. Using bagged prepped slaw makes it even easier. This literally takes 15 minutes to put together. I have to check myself from eating too much it’s so good.

This dinner is also super cost efficient. I buy the slaw, pork, and coconut aminos at Trader Joe’s. The other things I get at an Asian food market somewhere in town. Ethnic stores are great places to get all kinds of stuff at a good price; we’re lucky to have all kinds in Sacramento. At the Asian market, I buy sesame oil, fish sauce (check the label), ginger, tea, curry, dried mushrooms, limes, thai basil (if it’s not at the farmers market), tongs, bowls, all kinds of good stuff there! Sometimes I get these little yummy spring rolls too, 3 for $1.

1lb. ground pork

1T. coconut oil

2 12oz. bags broccoli slaw (or you could buy broccoli and send it through the food processor)

1 small onion

3 cloves garlic, minced

1 in. piece ginger, minced

⅓ c. coconut aminos

1T sesame oil

1T. fish sauce

Juice from ½ a lime

Abundant hand full chopped cilantro

Chopped fresh jalapenos or other pepper of choice (optional, for spice)

  • Heat large skillet on high, melt oil, and add pork.  Cook till brown, about 5 minutes, breaking up and stirring.
  • Add onion, garlic, and ginger, cooking with meat for about 2 minutes.
  • Add bags of veggies.  Cook till desired doneness- I like mine a little al dente, so it only took about 5 minutes.  Make sure you turn and stir.
  • Add the coconut aminos, sesame oil, fish sauce, and lime juice.  Cook for a couple more minutes, stirring to coat everything. 
  • Top with cilantro.  
  • Add jalapenos if desired.
